You can press Alt + X as an alternative. This will also take a clip. 3. Create the clip. You can trim the clip to include just the moment you're interested in. I never saw the answer to question #1 so just in case: Go to your stream manager on Twitch. Click Extensions (puzzle piece). The click my extensions and disable remove the soundtrack overlay/component by clicking the little trashcan. r/Twitch.
